Ingredients
  

For the Chili:

  • 2 tablespoons extra virgin olive oil
  • 1 small white onion, roughly chopped
  • 1 green bell pepper, roughly chopped
  • 1-4 chipotles in adobo sauce (depending on how spicy you like want it to be)
  • 6 cloves fresh minced garlic
  • 1- pound vegan ground meat
  • 3 tablespoons chili powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons liquid smoke
  • 1 teaspoon kosher salt
  • 3 cups vegetable broth
  • 1 (15-ounce) fire roasted diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 cup light beer, such as a pilsner or lager
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed

Garnishes/Toppings:

  • Vegan cheddar cheese shreds
  • Vegan sour cream
  • Thinly sliced green onion
  • Corn chips, for serving, optional

Instructions
 

  • Heat the olive oil in a soup pot over medium heat. Add the onions, bell peppers, and chipotle peppers and sauté for 5 to 6 minutes, until the onions are translucent. Add the garlic and cook until fragrant, 1 to 2 minutes. Add the vegan ground meat and season with the chili powder, smoked paprika, liquid smoke, and salt. Give it a good stir to thoroughly combine the ingredients. Continue to cook for 6 to 8 minutes, until the ground meat is browned.
  • Pour in the broth, fire-roasted tomatoes with their juice, tomato sauce, and beer. Increase the heat to high and bring to a boil. Once at a boil, lower the heat and simmer, partially covered, for 15 minutes.
  • Mix in all the beans, partially cover, and simmer for another 15 to 20 minutes. Taste and adjust seasonings if needed.
  • Serve immediately with your preferred garnishes and toppings, and enjoy!
