- 2 teaspoons liquid smoke
- 1 teaspoon kosher salt
- 3 cups vegetable broth
- 1 (15-ounce) fire roasted diced tomatoes
- 1 (15-ounce) can tomato sauce
- 1 cup light beer, such as a pilsner or lager
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can pinto beans, drained and rinsed
Garnishes/Toppings:
- Vegan cheddar cheese shreds
- Vegan sour cream
- Thinly sliced green onion
- Corn chips, for serving, optional
Heat the olive oil in a soup pot over medium heat. Add the onions, bell peppers, and chipotle peppers and sauté for 5 to 6 minutes, until the onions are translucent. Add the garlic and cook until fragrant, 1 to 2 minutes. Add the vegan ground meat and season with the chili powder, smoked paprika, liquid smoke, and salt. Give it a good stir to thoroughly combine the ingredients. Continue to cook for 6 to 8 minutes, until the ground meat is browned.
Pour in the broth, fire-roasted tomatoes with their juice, tomato sauce, and beer. Increase the heat to high and bring to a boil. Once at a boil, lower the heat and simmer, partially covered, for 15 minutes.
Mix in all the beans, partially cover, and simmer for another 15 to 20 minutes. Taste and adjust seasonings if needed.
Serve immediately with your preferred garnishes and toppings, and enjoy!
