Not to mention, they’re so easy and can be made ahead of time, making for the perfect party appetizer!

These Italian Sub Pull Apart Sliders are inspired by one of my favorite sandwiches before going vegan … the Italian BMT from Subway 🙂 Years ago, I used to work across the street from a Subway, and for about 3 months straight, I would get a BMT every. single. day for lunch. Don’t ask me why, but the obsession was very real.

Anyway, fast forward many years later and here we are with these Italian Sub Pull Apart Sliders – they’re like the mini vegan handheld version of the BMT, only better if I do say so myself 😉 I honestly never thought I’d have a sandwich like the BMT again, but vegan deli meats are getting better and better every year and I promise you, even staunch meat-eaters will devour these!

Vegan Italian Sub Pull Apart Sliders

If you like sub sandwiches and appetizers that are handheld, then you’re going to love these! They’re meaty, and cheesy, and savory, and doused in the most delicious herby garlic butter! Here’s what you need to make them:

  • Vegan-friendly dinner rolls
  • Vegan-friendly pesto: this can be homemade or store-bought! For this recipe, I used this Sun Dried Tomato and Olive Pesto, but I also have this homemade pesto recipe that’s super easy and delicious!
  • Vegan provolone cheese
  • Assorted vegan deli meats: I’ve made a variation of these Italian Sub Pull Apart Sliders many times, and each time, I use whatever vegan meats I can find at my local grocery store – and I typically try to find deli meats on sale (check FoodCo, Winco, Food 4 Less, Target, Walmart, etc!). For this recipe, I used this vegan ham, this vegan prosciutto, and these vegan pepperonis, but again … use whatever you can find! Other great options would be peppered deli slices, vegan turkey, or veggie salami!
  • Fresh spinach
  • Vegan butter
  • Garlic
  • Parsley
  • Marinara sauce

how to make Italian Sub Pull Apart Sliders

You’re less than an hour away from the meatiest, cheesiest, herbiest snack in just 3 easy steps! Here’s how to make ’em:

1. Build and Butter:

Spread 2/3 of the pesto onto the bottom half of the dinner rolls. Then lay 6 slices of cheese in an even layer, followed by the deli meats, and spinach. Dollop the remaining pesto on top of the spinach, followed by the remaining slices of cheese. Place the top half of the dinner rolls on top of the cheese and brush the tops with the vegan butter. Sprinkle on the garlic and parsley and loosely cover with foil.

2. Bake:

Bake until the cheese is mostly melted, 12 to15 minutes. Remove the foil and bake an additional 10-12 minutes, until the rolls are golden brown.

3. garnish and enjoy:

Remove from the oven, sprinkle with additional fresh parsley, and serve immediately with marinara sauce.

You sure can! These sliders can be made up to 3 days ahead of time. To do so, follow the directions, but do not bake them. Cover tightly with foil and store in the refrigerator. When you’re ready to prepare, bake according to the directions.

Ingredients
  • • 1 (12-count) package vegan-friendly dinner rolls, cut in half lengthwise
  • • ¾ cup vegan-friendly pesto, homemade or store-bought, divided
  • • 10 slices vegan provolone cheese, divided
  • • 12 ounces assorted vegan deli meats
  • • 5 ounces chopped fresh spinach
  • • ¼ cup vegan butter, room temperature
  • • 8 cloves fresh minced garlic
  • • ¼ cup fresh minced parsley
  • • Marinara sauce, for serving
Instructions
  1. Preheat oven to 350°F.
  2. To prepare the sliders, spread ⅔ of the pesto onto the bottom half of the dinner rolls. Next, lay 6 slices of cheese in an even layer, followed by the deli meats, and spinach.
