Ingredients
  • • 1 (12-count) package vegan-friendly dinner rolls, cut in half lengthwise
  • • ¾ cup vegan-friendly pesto, homemade or store-bought, divided
  • • 10 slices vegan provolone cheese, divided
  • • 12 ounces assorted vegan deli meats
  • • 5 ounces chopped fresh spinach
  • • ¼ cup vegan butter, room temperature
  • • 8 cloves fresh minced garlic
  • • ¼ cup fresh minced parsley
  • • Marinara sauce, for serving
Instructions
  1. Preheat oven to 350°F.
  2. To prepare the sliders, spread ⅔ of the pesto onto the bottom half of the dinner rolls. Next, lay 6 slices of cheese in an even layer, followed by the deli meats, and spinach. Dollop the remaining pesto on top of the spinach, followed by the remaining slices of cheese. Place the top half of the dinner rolls on top of the cheese and brush the tops with the vegan butter. Sprinkle on the garlic and parsley and loosely cover with foil.
  3. Bake until the cheese is mostly melted, 12 to15 minutes. Remove the foil and bake an additional 10-12 minutes, until the rolls are golden brown.
  4. Remove from the oven, sprinkle with additional fresh parsley, and serve immediately with marinara sauce.
