That’s right! All of the crispy, savory deliciousness of an egg roll, with little to no effort. No making the filling, then stuffing each egg roll wrapper, then rolling and sealing, then finally frying. This fuss-free, one-skillet, 20-minute version requires none of that, but it’s still just as delicious!

If you’ve got a reasonably stocked pantry and a fridge full of veggies, then you’ve most likely got all the ingredients to make these vegan egg rolls in a bowl right now! Here’s what you’ll need:

  • toasted sesame oil
  • white and green onion
  • garlic
  • ginger
  • coleslaw mix – you can most certainly use cabbage instead, but I find buying the pre-mix is much easier!
  • shredded carrots – again, I buy these already shredded in the bag for minimal prep time
  • low sodium Tamari or soy sauce
  • sweet chili sauce (because what are egg rolls without that delicious sauce?!)
  • toasted sesame seeds
  • wonton strips (homemade or store-bought)

Not only is this vegan egg roll in a bowl delicious, but it’s also super easy. Like, make-it-with-your-eyes-closed easy. Including prep time, all you need is roughly 20 minutes from start to finish! Here’s what you do:

1. Sauté your aromatics

Heat the oil in a large skillet over medium heat. Once the oil is hot, add the onion, green onion, garlic and ginger, and sauté, stirring often, until the onion is translucent, 4 to 5 minutes.

2. cook the vegan ground

Add the vegan ground and continue to cook until browned and heated completely through, 6 to 8 minutes.

3. Veggies!

Add the coleslaw mix, carrots, tamari, and chili sauce. Cook, mixing to combine, until the cabbage is just slightly tender, about 2 to minutes.

4. Serve!

Serve with a generous sprinkle of toasted sesame seeds, a handful of crispy wonton strips, fresh green onion, and enjoy!

Ingredients
  

  • 2 teaspoons sesame oil
  • 1 cup chopped white onion about 1 onion
  • ¼ cup chopped green onion white and light green parts only (about 1 bunch)
  • 6 cloves minced garlic
  • 1 tablespoon minced ginger
  • 1 LB vegan ground
  • 4 loosely packed cups tri-color coleslaw mix
  • 2 loosely packed cup shredded carrots
  • ¼ cup reduced sodium tamari or soy sauce
  • 3 tablespoons sweet chili sauce
  • Toasted sesame seeds for serving
  • Crispy wonton strips for serving
  • Fresh chopped green onion for serving

Instructions
 

  • Heat the oil in a large skillet over medium heat. Once the oil is hot, add the onion, green onion, garlic and ginger, and sauté, stirring often, until the onion is translucent, 4 to 5 minutes. Next, add the vegan ground and continue to cook until browned and heated completely through, 6 to 8 minutes.
  • Add the coleslaw mix, carrots, tamari, and chili sauce. Cook, mixing to combine, until the cabbage is just slightly tender, about 2 to minutes. Taste and adjust seasonings if necessary.
  • Serve with a generous sprinkle of toasted sesame seeds, a handful of crispy wonton strips, fresh green onion, and enjoy!
