We’re ditching the weird flavor packet in these Vegan Crispy Ginger ‘Beef’ Ramen Noodles and making the best sauce ever. And ya know what’s even better? This seriously addicting sauce only requires 6 ingredients! Here’s what you’ll need:

  • Vegan butter
  • Low-sodium Tamari or Soy Sauce
  • Hoisin Sauce
  • Black pepper
  • Red pepper flakes
  • Sesame Oil

Six easy steps and less than 30 minutes are all that stand between you and a big ass bowl of the MOST. DELICIOUS. NOODS. Here’s how to make the easiest Vegan Crispy Ginger ‘Beef’ Ramen Noodles:

  1. Caramelize your onions in a skillet with some avocado oil for about 10 minutes.
  2. Boil your ramen noodles while the onions are caramelizing. Reserve 2 tablespoons of the water used to cook the noodles, drain and set aside.
  3. Add the vegan ground beef to the onions and crumble it with the back of a wooden spoon. Cook with the onions on medium high, getting the bits nice and crisp, while the onions continue to caramelize, another 10 minutes.
  4. Mix together all the ingredients for the sauce. Set aside.
  5. Toss in green onions, garlic, and ginger with onions and vegan ground. Sauté another 2-3 minutes.
  6. Mix it up! In the same pot that you cooked the noodles in, mix together your cooked ramen noodles, sauce, and crispy beef mixture. And that’s it! You just made the best damn Vegan Crispy Ginger ‘Beef’ Ramen Noodles. Give yourself a pat on the back, do a lil’ chef’s kiss, and serve yourself a big ass bowl of noodles!

Ingredients
Vegan Crispy Ginger 'Beef' Ramen:
  • 2 TBS avocado oil
  • 1 small onion, sliced thin
  • 1 LB vegan beef crumbles
  • ½ cup green onion (white and green parts), sliced thin + more for serving
  • 10 cloves garlic, minced
  • 2 TBS fresh grated ginger
  • 10 oz ramen noodles
  • Fresh cilantro, for serving
  • Thinly sliced carrots, for serving
  • Toasted sesame seeds, for serving
Sauce
  • 4 TBS vegan butter, room temperature
  • 4 TBS low-sodium Tamari
  • 2 TBS Hoisin sauce
  • 1½ tsp black pepper
  • 1 tsp sesame oil
  • 1 tsp red pepper flakes
Instructions
  1. In a large skillet on medium heat, add avocado oil. Once the oil is shimmering, add the onion and cook, stirring often, until it begins to caramelize, about 10 minutes.
  2. While your onions are caramelizing, cook ramen noodles according to package directions. Reserve 2 tablespoons of the water used to cook the noodles, drain, and set aside.
  3. Add the vegan ground beef to the onions and crumble it with the back of a wooden spoon. Cook with the onions, getting the bits nice and crisp, while the onions continue to caramelize, another 10 minutes.
  4. Meanwhile, prepare the sauce. Mix together all the sauce ingredients with 1 tablespoon of reserved pasta water (I like the sauce quite thick, but if you want it a bit thinner, add both tablespoons of reserved pasta water). It's ok if the sauce seems more like a paste! It will all melt into the noodles and crispy beef. Taste, adjust seasonings, and set aside.
  5. In the same skillet of caramelized onions and vegan ground, add green onions, garlic, and ginger. Cook until the garlic and ginger are fragrant, another 2-3 minutes. Remove from heat.
  6. In the same pot that you cooked the noodles in, mix together your cooked ramen noodles, sauce, and crispy beef mixture. Toss well to ensure all the noodles are coated in that delicious sauce! Serve with cilantro, carrots, sesame seeds, and green onion.
  7. ENJOY!!!

  1. Wow! I loved these noodles. They were so easy and absolutely full of flavor. I added some shredded Brussels sprouts that I had in my fridge and ended up using a skinny fettuccini noodle because that was all I had. Thanks Ashley for another winner!

  2. Sooooo good, it definitely wasn’t the prettiest but the taste was off the charts! Full of flavor and came together in no time. Love the sauce, another winner will make again. The caramelized onions added a fabulous depth of deliciousness. I threw in some broccoli, shredded cabbage and carrots and omitted the green onion since I didn’t have any. 10/10 a must try.

  3. Okay this might be my favorite dish by EFNP. If you love Asian noods as much as I do, this dish is for you. And not to mention, it took me like 20 minutes to make. It has a bunch of gingery, garlicky “meat”, all the umami flavors I crave, and ALL the NOODS ???? The only thing I would really advise is to double the recipe bc I ate almost the entire serving!

  7. SOOOOO GOOD OH MY GOSH. I am not vegan, but have been experimenting with vegan meals so I can do a few meatless days a week. I have made a lot of dishes that have disappointed, but this was not one of them. By far the best vegan dish I have made thus far and I will definitely be making it quite frequently.   10. SO GOOD but I was upset with myself for not taking her recommendation about keeping the sauce and noodles separate if not eating all at once, as my second bowl already had mushy noodles. My own fault – just warning others not to make the same mistake. But let’s focus on the fact I was going in for a second bowl – it’s freaking delicious! I’ve never really been pleased with my own cooking/recipes I find online when it comes to Asian inspired dishes but this one works!

    Made this DELICIOUS and relatively quick dinner for my family tonight. 10/10- it was perfection. I used impossible meat for the faux ground beef and because of Covid 19, decided to use capellini (closest sub I had) in place of the ramen as I didn’t have enough ramen and am 40 weeks pregnant (yes this is so easy even someone with a watermelon in their gut can make it) and didn’t want to go to the store. The crispiness of the meat and onions adds such a depth of flavor, while the fresh garlic and ginger seal the deal. Oh yeah, can’t forget the sauce- so simple yet so yum. HIGHLY recommend this as it comes together in about 30 minutes and is a crowd pleaser for all!
