  • 1 16-ounce block super firm tofu
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoon nutritional yeast
  • 1 teaspoon vegan chicken bouillon powder or paste
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup water
  • Salt and pepper, to taste

Instructions
 

  • Using a mandolin or vegetable peeler, slice the tofu into thin slabs (~⅛ to ¼ inch thick). Set aside.
  • In an oven-safe shallow dish or small baking dish, whisk together the soy sauce, nutritional yeast, bouillon paste, poultry seasoning, garlic powder, onion powder, and water until well combined.
  • Taste and adjust seasonings, adding salt and pepper if necessary.
  • Lay the tofu slices in the marinade and marinate, flipping the tofu slices every so often, at least 1 hour, preferably overnight.
  • When ready to bake, preheat oven to 375°F (190°C).
  • Cover the dish with foil and bake for 25 minutes (If the dish you marinated the tofu in isn’t oven-safe, transfer the tofu and the marinade to one).
  • Remove foil, flip tofu slices, and bake another 20 to 25 minutes, uncovered, until tofu is firm and slightly crisp and the marinade is mostly absorbed.

    I don’t think I ever commented on a recipe online, but I have to comment on this one for how incredible it is. It tastes as if I was eating from a rotisserie turkey, and has made lunch so much better. I have used this recipe three time and I mostly stuck to this recipe, I added herb seasoning (mix once, rosemary next, then thyme) and I used some homemade veggie stock for it.

    I’ve also learned to let it marinade in the fridge on the baking sheet so that it keeps in slice form and doesn’t break in transfer. This recipe is my new favorite and I can’t wait to have people try it!
