Romesco sauce comes from Tarragona, a Catalonian city just south of Barcelona on Spain’s northeastern coast. Its base ingredients usually include nuts—often almonds and/or hazelnuts—tomatoes, peppers, garlic, bread, olive oil, and vinegar, all mashed or processed into a paste. Other common ingredients include sherry vinegar, red wine vinegar and onions.

According to food writer Melissa Clark, cookbook author Penelope Casas was considered the recognized authority on romesco recipes for English speaking readers. When touring Catalonia, though, Clark discovered that there is no single correct recipe, and encountered several variations. Clark described romesco as “a rich and piquant purée made from sweet dried Spanish peppers along with tomato, garlic, almonds, vinegar and oil, pounded with breadcrumbs as a binder.”

Additionally, David Solé i Torné, the chef and owner of Barquet, an elegant seafood restaurant in Tarragona, is a romesco expert. “Each person makes romesco differently,” he said. “And each insists that his is the authentic one.”

As you read above, there is no right, wrong or *authentic* version of romesco sauce. Here’s what you’ll need to make my version of Pasta with Romesco Sauce:

  • Dried pasta of choice: I like to use short pasta noodles like rotini or cavatapi – better for getting all that delicious sauce in all these little crevices, but feel free to use whatever pasta you love!
  • Roasted tomatoes: while I prefer to roast my own, you can most certainly use whole fire roasted tomatoes in the can
  • Roasted red bell peppers
  • Almonds
  • Garlic
  • Sherry vinegar
  • Smoked paprika
  • Vegan parmesan, for garnishing
  • Fresh chopped basil, for garnishing

This recipe is so easy, you could probably make it with your eyes closed! Here’s to make this simple and tasty Pasta with Romesco Sauce:

1. Boil:

Cook the pasta in a large pot of salted water until al dente, according to package directions. Drain, but do not rinse.

2. Blend:

Meanwhile, place the remaining ingredients, besides the parmesan and basil, into a high-powered blender and pulse until smooth.

Transfer the sauce to a pot over low heat along with the cooked pasta noodles and toss until the noodles are thoroughly coated in the sauce. Taste and adjust seasonings if necessary.

  • • 12 ounces dried pasta of choice
  • • 1 ½ pounds roasted tomatoes or 1 28-ounce can fire roasted tomatoes, drained
  • • 1 cup roasted red bell peppers
  • • 1 cup roasted almonds
  • • 1 tablespoon good olive oil
  • • 6 cloves garlic
  • • 1 tablespoon sherry vinegar
  • • 2 teaspoons smoked paprika
  • • 1 teaspoon kosher salt plus more to taste
  • • ½ teaspoon fresh cracked black pepper plus more to taste
  • • ½ teaspoon cayenne powder optional
  • • Vegan parmesan for garnishing
  • • Fresh chopped basil for garnishing
