Mini Vegan Chicken Tostadas

Tostadas are such a fun, easy, and customizable dinner, but as much as they feel like party food, they’re not always the most practical choice for a gathering. Between the toppings sliding everywhere and trying to take a bite without making an absolute mess, eating a full-size tostada while mingling with people can get a little chaotic. And personally, I’d rather focus on the snacks than worry about wearing them!

That’s where these vegan mini chicken tostadas come in! They’re everything you love about traditional tostadas, just in a smaller, more party-friendly package. Crispy, seasoned air-fried tofu stands in for chicken, while crunchy corn tortilla rounds provide the perfect base for all your favorite toppings. They’re bite-sized, completely plant-based, and much easier to grab and enjoy while chatting with friends. And if f you’ve been around here for a while, you know I take my game day snacks verrrry seriously, despite having approximately zero interest in the actual game. One of my biggest rules? Snacks MUST be handheld. And these vegan mini tostadas check that box while delivering all the crunchy, savory goodness of a loaded tostada in a fun, shareable appetizer. The game may be optional, but the snacks are nonnegotiable!

What are Tostadas?

Where did tostadas originate?

Tostadas are a traditional Mexican dish with roots in the Indigenous food cultures of Mesoamerica, where corn has been a foundational ingredient for thousands of years. Before tostadas became the crispy, generously topped dish we know today, Indigenous communities were already making and eating corn tortillas as a staple food.

The basic idea behind a tostada is simple: take a corn tortilla, toast or fry it until crisp, and use it as a base for other ingredients. This technique also offered a practical way to make tortillas that had become too dry or firm to enjoy as soft tortillas again. Rather than waste them, they could be crisped up and given a second life. Over time, tostadas evolved into the beloved Mexican antojito (a traditional snack or small dish) enjoyed in countless variations throughout Mexico. Today, they’re topped with everything from refried beans, shredded chicken, and fresh vegetables to seafood, salsa, avocado, and more.

How these vegan mini chicken tostadas pull inspiration from the origina

These vegan mini chicken tostadas take inspiration from the traditional tostada’s simple formula: a crisp corn tortilla topped with flavorful ingredients. Instead of a full-size tortilla, I cut regular corn tortillas into little rounds with a cookie cutter, fry and season them until crunchy, and top them with torn tofu seasoned and air-fried until crispy.

The result is a plant-based twist that keeps the crunchy corn tortilla foundation while making the toppings and portions especially suited to sharing! They’re smaller than traditional tostadas, but they deliver the same satisfying combination of a crisp base and savory toppings! And because this is a game day snack, the mini size is intentional. They’re easy to pick up, easy to customize, and a whole lot of fun to serve. If you’d rather skip cutting and frying your own shells, round tortilla chips make an easy shortcut1

Why You’ll Love This Recipe

  • Budget-Friendly Ingredients: Ingredients like tofu, tortillas, and spices are affordable, cost-effective and (depending on your location) fairly accessible.
  • Customizable Toppings: Adjust flavors to your preference. Add jalapeños, swap sour cream varieties, sub beans for the guacamole, or experiment with different cheeses.
  • Party-Perfect Portion Size: No forks and no plates required (at least in theory!). These mini tostadas are made for grazing, sharing, and snacking between conversations.
  • Make-Ahead Friendly: Prepare components ahead of time and assemble just before serving to maintain shell crispness!

Step-by-Step Instructions

1. Prepare Tortilla Shells:

Cut 20 circles from corn tortillas using a 2¼-inch cutter. Fry in ¼-inch oil over medium-high heat for 1 to 2 minutes per side until golden. Alternatively, air-fry at 400°F for 6 to 8 minutes. Season with salt and chili powder while warm.

2. Season and Air-Fry the Tofu:

Press and tear 16 ounces of extra-firm tofu into 1-inch pieces. Toss with ancho chili powder, cumin, garlic powder, and salt until evenly coated. Arrange tofu in a single layer in your air fryer basket. Cook at 400°F for 20 to 25 minutes, shaking the basket halfway through. Target golden, crispy exterior with tender interior.

3. Prep Toppings:

While tofu cooks, prepare guacamole, slice radishes thinly, chop cilantro, and portion the vegan chipotle sour cream.

4. Assemble Tostadas:

Spread 1 tablespoon guacamole on each shell. Top with 1 to 3 pieces of crispy tofu. Drizzle sour cream, sprinkle cheese, and garnish with radish slices and cilantro. Serve immediately.

Tips and FAQs

  • Getting Crispy Tofu Right: Press excess moisture from the tofu block before seasoning. Use a clean kitchen towel wrapped around the pressed tofu for 10 minutes. Tear pieces unevenly. This creates more surface area for seasoning adherence!
  • Cutting Consistent Circles: I like to use a 2¼-inch biscuit cutter or the rim of a shot glass. Stack tortillas two-deep to speed up cutting.
  • Keeping Shells Crisp: Fill tostadas immediately before serving. Guacamole and wet ingredients will soften shells within 30 minutes.

Can I use flour tortillas instead of corn?

Flour tortillas won’t crisp properly for tostada shells. Stick with corn tortillas for authentic texture and gluten-free compatibility.

How do I prevent soggy tortillas?

Keep wet toppings separate until serving. Store prepared components individually and assemble just before guests arrive.

Can I make these ahead of time?

Yes. Cook tofu and fry shells up to a day in advance. Cover and store at room temperature. Re-crisp shells and tofu in the oven at 350°F for 5 minutes before assembling.

Your New Favorite Game Day Snack!

I love that these mini tostadas bring all the textures you’d want in a good snack while keeping everything handheld! They’re a fun addition to a game day spread, but don’t save them just for football season. Serve them at your next party, bring them out for movie night, or make a batch whenever an easy, crunchy snack sounds good! And if you want to make entertaining even easier, prep your toppings ahead of time, then assemble the tostadas just before serving so the shells stay nice and crisp. Homemade mini shells are fun, but round tortilla chips work beautifully when you want to cut down on prep time.

If you make these vegan mini chicken tostadas, I’d love to hear what toppings you use! Snap a photo, take a video, or make a story and post it to Instagram or Facebook, and tag me at @eat_figs_not_pigs and #EatFigsNotPigs. I love seeing your recreations of my recipes! xx!
