Step-by-Step Instructions
1. Prepare the Seasoned Tofu Crumbles:
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup. In a large mixing bowl, whisk together the olive oil, fresh lemon juice, tomato paste, Knorr liquid seasoning, dried oregano, dried dill, and salt until smooth and well-combined. Add the shredded extra-firm tofu to the bowl. Gently toss with your hands or a spatula until every piece is evenly coated in the marinade. Spread the seasoned tofu in a single layer on the prepared baking sheet, avoiding overcrowding which leads to steaming instead of crisping. Bake for 20 to 30 minutes, tossing halfway through, until golden brown and crisp around the edges. Set aside to cool slightly.
2. Make the Chickpea Salad:
While the tofu bakes, prepare the chickpea salad. In a large bowl, whisk together olive oil, lemon juice, Dijon mustard, and agave until emulsified. Taste the dressing and adjust sweetness with more agave if desired, or add a pinch more salt and pepper. Add the rinsed chickpeas, diced cucumber, cherry tomatoes, and red onion to the bowl. Gently toss until all vegetables are lightly coated. Taste and adjust seasoning as needed.
3. Assemble and Enjoy!
To assemble each bowl: Start with a generous portion of rice at the base. Top with seasoned tofu crumbles, followed by the chickpea salad. Finish with Kalamata olives, a dollop of vegan tzatziki, pickled red onions, and fresh minced parsley. Serve immediately with lemon wedges on the side for extra brightness. Enjoy!

Tips and FAQs
- Season the tofu generously: Tofu has a mild flavor on its own, so the seasoning makes all the difference!
- Prep the components ahead of time: These tofu bowls are perfect for meal prep. Cook the tofu and grains in advance, chop your vegetables for the salad, and store the dressing separately so everything stays fresh throughout the week.
What type of tofu is best for these bowls?
Super-firm or extra-firm tofu is the best choice for tofu bowls because it creates a hearty texture and holds up well when baked, air-fried, or pan-fried. Firm tofu can also work, but it may not become quite as crispy.
How long do these last in the fridge?
Prepared tofu bowls can usually be stored in an airtight container in the refrigerator for about 3 to 4 days. For the best texture, store each of the components (the tofu, grains, salad, sauce) separately and assemble right before eating.
