Ingredients
  

For the Sauce:

  • 6 oz cauliflower, chopped
  • 10 oz cherry tomatoes
  • 1 small zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 white onion, chopped
  • 2 small carrots, peeled and chopped
  • 1 head of garlic, top sliced off
  • 2 tablespoons olive oil
  • ½ cup vegetable broth
  • 2 tablespoon nutritional yeast
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper

For th Breadcrumbs:

  • 2 tablespoons extra virgin olive oil
  • 1 cup panko breadcrumbs
  • Zest of 1 small lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon kosher salt

For the Pasta:

  • 1 pound noodles of choice
  • Vegan Parmesan for serving, optional
  • Fresh minced parsley, for garnish, optional

Instructions
 

  • Preheat oven to 400°F.
  • Place the cauliflower, zucchini, bell pepper, onion, carrots and garlic on a parchment paper-lined baking sheet. Drizzle with the olive oil and bake until the vegetables are tender, 40 to 45 minutes.
  • Remove from the oven and once cool enough to handle, transfer the veggies to a blender along with the rest of the sauce ingredients and pulse until smooth. Taste and adjust seasonings, if necessary. Set aside.
  • Meanwhile, prepare the breadcrumbs. Heat the oil in a small sauté pan over medium-low heat. Once the oil is hot, add the all the breadcrumb ingredients to the pan, mixing gently with a spatula to combine.
  • Cook the breadcrumbs over medium-low heat, stirring frequently, until they turn golden-brown and crispy, 5 to 8 minutes. Remove from the heat and set aside.
  • Next, cook the pasta according to package directions. Drain and place the pasta back into the pot. Pour in the pasta sauce and toss to coat.
  • Serve immediately and garnish with breadcrumbs, parmesan and parsley. Enjoy!
