Crispy Cajun-Inspired Hand Pies

These Crispy Cajun-Inspired Hand Pies are one of my favorite recipes to make once the temperatures start to cool … there’s just something about them that remind me of cozy fall vibes! Not only are they filled with smoky, cheesy, spicy goodness, but they’re also incredibly versatile I love keeping a stash in the freezer for those days when I want a cheesy snack, or when I’m hosting friends last minute! Imagine flaky puff pastry wrapped around melty, Cajun-spiced filling – perfect with hot sauce and sharing with friends! Comfort food, but portable (aka my favorite kind of snack).

Step-by-Step Instructions

1. Prep and Crisp the Tofu:

Toss the diced tofu with cornstarch and Cajun seasoning until evenly coated. Pan-fry until golden and crispy on all sides, about 12 to 15 minutes. Remove from pan and set aside.

2. Caramelize the Veggies:

In the same pan, cook onion and bell pepper in oil until softened and caramelized, 10 to 15 minutes. Return the tofu to the pan, stir in the garlic and more Cajun seasoning, and cook until fragrant.

3. Make it Cheesy!

Reduce heat to low and stir in vegan mozzarella and cheddar until creamy and melty.

4. Assemble and Bake:

Roll out the puff pastry sheets, cut into squares, and spoon filling in the center of half of each square. Seal with another square on top, pressing the edges with a fork. Bake at 375°F for 20 minutes. Remove from the oven, brush tops with melted butter, sprinkle with cheddar. Place back into the oven and bake another 6 to 10 minutes, until crisp and golden.

5. Serve and Enjoy!

Cool slightly, garnish with parsley, and serve with hot sauce for serving.

  • Press your tofu well: This will yield in a crispier texture!
  • Use room temperature cheese: People always ask me how I get vegan cheese so melty, and my number one tip is to make sure it’s AT ROOM TEMPERATURE! This helps it melt smoothly into the filling.
  • Don’t overfill: This one’s hard for me, but less is more. About 2 scant tablespoons of filling per pastry square ensures no leaks.
  • Seal tightly: Use a fork to press the edges and prevent filling from oozing out.

Absolutely! These hand pies are perfect for meal prep.

To freeze them, assemble the pies completely but stop before baking. Place the unbaked pies on a parchment-lined baking sheet and flash-freeze them for 1–2 hours until solid to prevent sticking. Once frozen, transfer them to an airtight freezer bag or container where they can be stored for up to 3 months. When you’re ready to eat, there’s no need to thaw; simply bake them directly from frozen at 375°F (190°C). You’ll just want to add about 5–7 minutes to the original baking time. Be sure to brush with melted butter and sprinkle with cheddar cheese right before popping them into the oven so the cheese melts perfectly without burning.

Most store-bought puff pastry is accidentally vegan, just check the label to be sure! Some brands that are accessible to me are Jus-Rol Puff Pastry Dough, Sweet Loren’s Puff Pastry, and Sprouts brand Puff Pastry.

Ingredients
  

  • 1 (16-oz) block of extra firm tofu, pressed and diced
  • 2 tablespoons cornstarch
  • 1 ½ teaspoons Cajun seasoning, such as Slap Ya Mama or Tony Chachere’s, divided
  • 3 tablespoons neutral oil, such as vegetable or canola, divided
  • 1 medium white or yellow onion, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 6 cloves fresh minced garlic
  • 1 cup vegan cheddar shreds, at room temperature, plus more for garnish
  • ¾ cup vegan mozzarella shreds, at room temperature
  • 2 sheets vegan-friendly puff pastry, thawed (usually 1 box)
  • 2 tablespoons melted vegan butter
  • Fresh minced parsley, for garnish, optional
  • Hot sauce, for serving, optional

Instructions
 

  • In a large bowl, toss the diced tofu with the cornstarch and 1 teaspoon of the Cajun seasoning until evenly coated.
  • Heat 2 tablespoons of oil in a large sauté pan over medium-high heat.
  • Once the oil is hot, add the tofu and cook, stirring occasionally, until golden and crispy on all sides, 12 to 15 minutes.
  • Remove from the pan and set aside.
  • Heat the remaining tablespoon of oil in the same pan over medium heat.
  • Add the onion and bell pepper. Cover and cook, stirring every few minutes, until caramelized, 10 to 15 minutes.
  • Meanwhile, preheat your oven to 375°F.
  • Add the reserved tofu back to the pan and toss to combine.
  • Next, add the garlic and season with the remaining ½ teaspoon of the Cajun seasoning. Cook until fragrant, 1 to 2 minutes.
  • Reduce the heat to low. Stir in the mozzarella and cheddar until melted and creamy throughout, 3 to 5 minutes. Remove from heat.
  • On a lightly floured surface, roll out each puff pastry sheet slightly to smooth. Cut each into 9 squares (18 total).
  • Place 2 tablespoons of the filling in the center of half of the pastry squares, leaving room at the edges.
  • Top each pastry square with another square and seal the edges with a fork. Transfer to a parchment-lined baking sheet.
  • Bake at 375°F for 20 minutes.
  • Remove from the oven, brush the tops of the hand pies with the melted butter.
  • Sprinkle the tops with a little extra cheddar (if using) and bake another 6 to 10 minutes, until golden brown and crispy.
  • Let cool at room temperature before serving.
  • Garnish with fresh minced parsley and serve with your favorite hot sauce. ENJOY!

    I can’t believe it, but I had everything to make half a batch of these hand pies (pastry sheets being the limiting factor). Usually I tend to not be satisfied with the taste that vegan chick’n products have, but everything worked deliciously in this recipe. I made mine with only one type of cheese (school night vegan’s mozzarella recipe). The taste was incredible. I look forward to trying out this filling in other pastry types. Top tier and better than a Hot Pocket!
