- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons neutral oil, such as avocado or vegetable oil
- 1 small onion, diced
- 4 cloves fresh minced garlic
- 1 ½ cup refried beans
- 1 ½ cups vegan shredded cheese
- 12 flour tortillas, warmed
- Thinly sliced lettuce, for serving, optional
- Fresh minced cilantro, for serving, optional
- Pico de gallo, for serving, optional
