Step-by-Step Instructions
1. Prepare Your Skewers and Make the Cheeseburger Mixture:
If using wooden skewers, submerge them in water for at least 30 minutes to prevent burning on the grill.
In a large bowl, combine the vegan ground beef, cheese shreds, minced onion, tomato paste, mustard, smoked paprika, and salt. Mix thoroughly until everything is well combined. Set aside while you prepare the sauce.
2. Whisk the Burger Sauce:
In a small bowl, combine all burger sauce ingredients except salt and pepper. Whisk until smooth and creamy. Taste and adjust seasoning, adding salt and pepper if desired. Set aside.
3. Prep, Layer, and Skewer:
Stack your tortillas and trim off the edges to create uniform squares. Spread a thin, even layer of the cheeseburger mixture onto each tortilla square. Stack each layered tortilla on top of one another. Once stacked, slice vertically into 4 even strips. Then divide into 2 stacks of 2 strips each. Insert 3 skewers evenly spaced into each stack. Cut between each skewer to create individual kabob portions.
4. Grill:
Preheat your grill to medium heat. Grill the skewers for 12 to 15 minutes, turning every 2 to 3 minutes, until the edges are golden brown and crispy and the interior is heated through.
5. Serve and Enjoy!
Serve immediately with the burger sauce and sliced dill pickles (or any other burger condiments you like!) on the side.

Tips and FAQs
- Soak Wooden Skewers: If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- Stack Evenly: When layering tortilla squares, keep stacks consistent to ensure even cooking.
- Don’t Overfill: Apply a thin, even layer of the cheeseburger mixture to avoid the kabobs falling apart on the grill.
- Watch the Heat: Grill on medium heat and turn frequently! These cook fast and can burn quickly if you walk away.
- Alternative Cooking Methods: No grill? No problem! Stovetop and air-fryer instructions are in the notes section of the recipe at the bottom of this post.
Can I make these without a grill?
Yes! Stovetop and air-fryer instructions are in the notes section of the recipe at the bottom of this post.
How do I store leftovers?
Store cooled kebabs in an airtight container in the refrigerator for up to 3 days. Reheat in an oven or air fryer to maintain crispiness.
Can I make these ahead of time?
Yes! Prepare the cheeseburger mixture and burger sauce up to 2 days in advance. Assemble the kebabs just before grilling for best results.
Are these freezer-friendly?
You can freeze the assembled but uncooked kabobs on a baking sheet, then transfer to a freezer bag for up to 1 month. Grill from frozen, adding a few extra minutes to cook time.
