This Cowboy Caviar with Chipotle Lime Dressing is a fresh, flavorful bean salad that's perfect for meal prep, summer gatherings, or an easy healthy lunch. Packed with beans, crisp vegetables, and a smoky, zesty dressing, it's high in fiber, incredibly versatile, and even better the next day!

Ingredients:
- 4 large Roma tomatoes, seeded and diced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can black-eyed peas, drained and rinsed
- 2 cups corn kernels
- 1 large red bell pepper, seeded and diced
- ½ red onion, diced (about ~1 cup)
- ½ cup fresh minced cilantro, plus more for garnish, optional
- 1 large jalapeno, seeded and diced
- 2 avocados, diced
Chipotle-LIme Dressing:
- ⅓ cup olive oil
- 3 tablespoons red wine vinegar
- 3 tablespoons fresh lime juice (1-2 limes)
- 2-3 chipotles in adobo sauce, plus 2 tablespoons of the adobo sauce
- 3 cloves garlic
- 2 teaspoons agave
- 1 teaspoon ground cumin
- ½ teaspoon salt, plus more to taste
- Tortilla chips, for serving, optional
Place the tomatoes, black beans, black-eyed peas, corn, bell pepper, red onion, cilantro and jalapeno in a large bowl and set aside (Note: do not add the avocado yet).
To make the dressing, place all the ingredients in a blender and pulse until smooth. Taste and adjust seasonings, if necessary.
Pour the dressing over the veggies and beans and toss gently to coat.
Cover and refrigerate for at least 1 hour to let the flavors develop.
Just before serving, gently toss in the avocado.
Garnish with fresh cilantro and serve with tortilla chips. Enjoy!
