Garlic Parmesan Tofu Skewers

These Garlic Parmesan Tofu Skewers are the ultimate savory summer bite! Juicy on the inside, crispy on the edges, and loaded with garlicky, herby flavor. They’re easy enough for an easy weeknight dinner, but delicious enough to impress at any summer cookout or gathering!

How to Make Garlic Parmesan Tofu Skewers

1. Prep Your Skewers:

If using wooden skewers, soak them in water for at least 30 minutes. This prevents them from burning on the grill.

2. Make the Tofu Marinade:

In a large bowl, mix together nutritional yeast, olive oil, minced garlic, lemon juice, Italian seasoning, smoked paprika, salt and pepper. Whisk until combined.

3. Marinate the Tofu and Mix the Garlic Parmesan Butter:

Tear the super firm tofu into 2-inch pieces. Add the torn tofu pieces to the marinade and toss to coat thoroughly. Marinate for at least 30 minutes, preferably 2 to 3 hours for best flavor.

In a separate bowl, mix together the melted vegan butter, grated vegan parmesan, minced parsley, garlic powder, minced garlic, and red chili flakes (optional). Set aside.

4. Assemble and Grill:

Thread the marinated tofu onto skewers. Grill over medium heat for 8 to 10 minutes, turning occasionally, until golden and crisp on the edges.

5. Bush, Serve, and Enjoy!

Immediately brush the hot skewers with the garlic parmesan butter mixture. Garnish with more parsley and an extra sprinkle of vegan parmesan. Serve immediately and enjoy!

Tips and FAQs

  • Use super firm tofu: It holds up best on the grill and it’s already been pressed before packing, so I don’t find the need to press it (which saves time!).
  • Marinate longer: If you have time, 2 to 3 hours gives maximum flavor. I like to get it marinating first thing in the morning or night before, so they’re ready to throw on the grill a few hours later!
  • No grill? No problem! I have instructions for stovetop, air fryer, and oven in the recipe card notes at the bottom of the page!
  • Add veggies: Alternate tofu with mushrooms, zucchini, or bell peppers for extra variety.

What if I can’t find grated vegan parmesan?

No problem! You can use a vegan parmesan wedge and finely grate it yourself using a microplane or box grater, or you can finely pulse shredded vegan parmesan in a food processor or spice blender. If that’s not available, try substituting with homemade vegan parm (blended cashews, nutritional yeast, garlic powder, and salt), or even just extra nutritional yeast for a similar savory, cheesy flavor.

Can I use extra firm tofu instead of super firm?

You can! Make sure to press it well beforehand (25 to 30 minutes) to avoid excess moisture and crumbling.

Can these be made in advance?

Yes! Marinate the tofu the night before and mix the garlic parmesan butter in advance. Just grill and brush before serving.

Ingredients
  

  • 1/3 cup nutritional yeast
  • 1/4 cup olive oil
  • 12 cloves fresh minced garlic, divided
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 ½ teaspoons salt, divided
  • 1 ½ teaspoons pepper, divided
  • 2 16-ounce blocks of super firm tofu, torn into 2”- inch pieces
  • 6 tablespoons vegan butter, melted
  • ½ cup grated vegan parmesan
  • ¼ cup fresh minced parsley, plus more for garnish
  • 1 teaspoon garlic powder
  • ½ teaspoon red chili flakes, optional

Instructions
 

  • Before starting, if using wooden skewers, make sure to them in water for at least 30 minutes to avoid burning.
  • In a bowl, mix nutritional yeast, olive oil, 8 cloves minced garlic, lemon juice, Italian seasoning, smoked paprika, 1 teaspoon salt and 1 teaspoon pepper until combined.
  • Add tofu pieces and toss to coat. Let marinate for at least 30 minutes (preferably 2 to 3 hours).
  • Meanwhile, mix melted vegan butter with vegan parmesan, parsley, garlic powder, and red chili flakes until combined. Set aside.
  • Preheat grill to medium heat and cook skewers, turning occasionally until golden and crisp around the edges, 8 to 10 minutes.
  • Brush or drizzle the butter and parmesan mixture over skewers while still hot.
  • Sprinkle with fresh parsley and an extra dusting of vegan Parmesan. Serve immediately and enjoy!

To Bake:

  1. Preheat your oven to 425°F (220°C).
  2. Place assembled skewers on a parchment-lined baking sheet.
  3. Bake for 25–30 minutes, flipping halfway through, until golden and crispy on the edges.
  4. Brush with the garlic parmesan butter mixture immediately after baking while still hot.
Tip: For extra crispiness, broil for the last 2–3 minutes—just keep a close eye on them!
 

To Air-Fry:

  1. Preheat your air fryer to 400°F (200°C).
  2. Arrange the skewers in a single layer in the basket (you may need to work in batches).
  3. Air fry for 10–12 minutes, flipping halfway through, until browned and crisp.
  4. While still hot, brush or drizzle with the garlic parmesan butter mixture and garnish with parsley.
Note: Depending on the size of your air fryer, you may want to use shorter skewers or remove the tofu from the sticks before air frying and re-skewer for serving.
