In my opinion, nothing screams summer like bruschetta. Tomatoes are in peak season, there’s virtually no cooking or utensils required, and only the simplest and freshest ingredients are used to make this perfect meal. Add a little smear of zesty pea pesto to the grilled bread, and you’ve got a fun spin on a traditional classic dish!
What is Bruschetta?
Bruschetta (pronounced broo-SKEH-tuh) is a traditional Italian appetizer that dates back to at least the 15th century, with roots even earlier in Ancient Rome. The word bruschetta comes from the Roman dialect verb bruscare, which means “to roast over coals” — referring to the way the bread is grilled. Classic bruschetta typically features slices of rustic bread that are toasted or grilled, rubbed with garlic, and topped with fresh ingredients like diced tomatoes, olive oil, salt, and basil.
This Pea Pesto Bruschetta is inspired by those traditional flavors, but with a bright and refreshing twist. It still uses toasted bread rubbed with garlic and a juicy tomato topping, but adds a creamy, herbaceous pea pesto as the base layer. The result is a vibrant, modern take that stays true to the heart of classic bruschetta while bringing in new textures and flavors perfect for summer.

Why You’ll Love This Pea Pesto Bruschetta:
- Quick and Easy: Comes together in about 20 minutes.
- Fresh and Herby: Loaded with basil, mint, and lemon zest (all the flavors of Spring and Summer, in my opinion!).
- Perfect for Summer: Light, vibrant, and best served al fresco.
- Great for Sharing: Ideal as an appetizer or light lunch.
How to Make Pea Pesto Bruschetta:
1. Make the Tomato Topping:
In a medium bowl, combine the cherry tomatoes, red onion, balsamic vinegar, salt, and olive oil. Mix well and let it marinate while you prepare the pesto and bread. The longer it sits, the more flavorful it becomes!

2. Make the Pea Pesto:
Add all pesto ingredients to a food processor or blender: peas, basil, olive oil, nutritional yeast, pine nuts, mint, garlic, lemon zest and juice, salt, and red pepper flakes. Blend until smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning.

3. Grill or Toast the Bread:
Brush your sliced bread with olive oil and grill until golden and crisp. No grill? No problem. Use a hot cast iron pan or toast them in the oven until lightly browned.
4. Rub with Garlic:
While the bread is still warm, rub the cut side of a garlic clove over the grilled side. This adds the perfect garlicky punch without overpowering the flavors.
5. Assemble the Bruschetta:
Spread about a tablespoon of pea pesto on each slice of bread. Top with a spoonful of tomato mixture and some of the marinating liquid. Garnish with fresh basil. Serve immediately and enjoy the ultimate summer bite!

Tips and FAQs
This Pea Pesto Bruschetta is almost too easy to make, but there are a few basic rules to ensuring that your bruschetta is *chef’s kiss*, the best! Follow these guidelines and you’re on your way to the perfect bruschetta:
- Good tomatoes: This might seem obvious, but the best bruschetta requires the best tomatoes. I like to use a variety of cherry tomatoes for different flavors! Whatever tomatoes you opt for, make sure to choose the best of the batch!
- Use fresh herbs: for the most vibrant flavor. Dried won’t give the same brightness.
- Good bread: In addition to good tomatoes, you need good bread! When picking bread for bruschetta, make sure it’s coarse enough to absorb the liquid from the bruschetta – something like a large rustic loaf would be ideal. Another tip to remember, slice your bread about 1/2″ thick. If it’s too thin, it’ll basically turn into a crouton once you grill it. If it’s too thick, you’ll taste too much bread and not enough bruschetta.
- Make ahead: The pea pesto and tomato topping can be made a few hours ahead. Store separately and assemble just before serving.
- No pine nuts? Use walnuts, sunflower seeds, or almonds as an affordable swap.
- Grill your bread: Whether you grill it on your BBQ or cast iron skillet, you should definitely grill your bread! Doing so adds that toasty-ness that we all know and love in perfectly grilled bread.
- Marinate the tomatoes: For at least 10 minutes. Doing so helps marry all the flavors!
Can I make Pea Pesto Bruschetta ahead of time?
Yes! You can prep the pesto and tomato topping in advance. Just wait to toast the bread and assemble until ready to serve for best texture.
Can I use frozen peas?
Absolutely. Just thaw them first — they blend up beautifully.
How do I store leftovers?
Store pesto and tomato topping in separate airtight containers in the fridge for up to 3 days. Bread is best toasted fresh.
