Chocolate Peanut Butter Pretzel Bites

With just a handful of ingredients, these chocolate peanut butter pretzel bites come together in just few minutes and make the perfect healthier treat when you’re craving something sweet and salty!

Ingredients
  

  • ½ cup pitted dates
  • ½ cup peanuts, plus more for garnish
  • 3 tablespoons peanut butter
  • ½ teaspoon vanilla extract
  • 24 mini pretzels
  • ¾ cup vegan-friendly semi-sweet chocolate chips, melted according to package directions.
  • Flakey salt, for garnish

Instructions
 

  • Place the dates, peanuts, peanut butter, and vanilla extract in a food processor and pulse until a crumb forms. It should be a slightly loose crumb but hold together when you press it between your fingers.
  • Using your hands, place 2 teaspoons of the mixture on top of a mini pretzel, and very gently press down, so it forms to each pretzel. Place the date and peanut topped pretzels in a single layer on a parchment paper-lined tray and drizzle the melted chocolate over the pretzels. Sprinkle each pretzel with a bit of sea salt and top with peanuts (optional).
  • Place the pretzels in the freezer for 15 to 20 minutes, or until the chocolate solidifies. Store in closed container in the refrigerator and enjoy!
