5-Minute Banana Bread Mug Cake (Vegan)

If you love banana bread, you will fall in love with this delicious banana bread mug cake! It’s simple, easy to prepare, and made in just 5 minutes! The perfect treat for when that craving for something sweet hits you out of nowhere!

Ingredients
  

  • 1 small extra ripe banana (about ½ cup)
  • 3 tablespoons all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • Pinch of sea salt
  • 1 tablespoon maple syrup or agave
  • 1 tablespoon non-dairy milk
  • ½ teaspoon vanilla extract

Optional Add-Ins:

  • 1 tablespoon vegan-friendly chocolate chips
  • 1 tablespoon chopped walnuts

Instructions
 

  • In a microwave-safe mug, mash the banana with a fork.
  • Add the oat flour, baking powder, cinnamon, and a pinch of salt to the mug. Mix well to combine.
  • Stir in the maple syrup, non-dairy milk, and vanilla extract until the batter is smooth.
  • If desired, fold in any optional add-ins such ass chocolate chips and/or chopped walnuts.
  • Microwave the mug on high for 1 ½ to 2 minutes, or until the cake is set in the middle. Please note that cooking times may vary depending on your microwave’s wattage, so keep an eye on it to avoid overcooking.
  • Carefully remove the mug from the microwave (it will be hot!) and let the banana bread mug cake cool for a minute or two.
  • Optional: top with additional banana slices, more chocolate chips or chopped walnuts, and enjoy!
