Meatball Sub Bites

These meatball sub bites are a fun twist on the classic meatball sub sandwich! Fluffy crescent roll dough is layered with savory marinara sauce, vegan mozzarella, and premade meatballs for an easy snack that is perfect for get-togethers! The best part? They’re not nearly as messy as a meatball sub, but they’re every bit as delicious!

Ingredients
  

  • 1 8-ounce sheet of crescent roll dough
  • ½ cup marinara sauce divided, plus more for serving
  • ½ cup vegan mozzarella shreds divided
  • 12 premade vegan meatballs thawed, if frozen
  • Fresh minced basil for garnish

Instructions
 

  • Preheat oven to 375° F.
  • Unroll the crescent roll sheet on a clean, lightly floured surface. Using a sharp knife or pizza cutter, cut the dough into 12 squares (3 rows, 4 columns), then line each square into a lightly greased cupcake tin.
  • Place 2 teaspoons of the marinara into each dough square, followed by 2 teaspoons of the vegan mozzarella shreds. Place a meatball into each dough square, then top each meatball with a couple more teaspoons of the mozzarella and marinara sauce.
  • Place the cupcake tin in the oven and bake until the dough turns light- golden-brown and the cheese is melted and bubbly, 10 to 13 minutes.
  • Remove the cupcake tin from the oven and let it cool at room temperature for 5 minutes. Garnish with fresh minced basil and serve with extra marinara sauce and enjoy!
