Stir fried noodles studded with crispy vegan "beef" and veggies, then smothered in the most delicious peppery asian-inspired sauce. The best part? It comes together in about 30 minutes, making this bowl of noods a weeknight lifesaving dinner!
½cupwhite and light green parts of green onions,chopped (about 1 bunch)
2jalapenos,deseeded, deveined, and thinly sliced
10clovesfresh minced garlic
300gramsfresh vegan-friendly noodles of choice,such as Hokkien or Udon
Thinly sliced green onion,for garnish

Instructions
For the ‘beef’, soak the soy curls in hot water for 8 to 10 minutes. After the soy curls have soaked, drain and squeeze out the excess water thoroughly through a fine-mesh sieve or cheesecloth. Place the soy curls in a bowl and mix with the with the Shaoxing wine, soy sauce, hoisin, salt and cornstarch, tossing to thoroughly combine. Place the oil in a large skillet over medium high heat. Once the oil is hot, add the seasoned soy curls and cook, stirring every couple of minutes, until the edges are crisped, 8-10 minutes. Transfer the soy curls to a plate and set aside.
Meanwhile, prepare the sauce by whisking together its ingredients in a bowl. Set aside.
For the stir fry, add the oil to the same skillet that you cooked the soy curls in over medium-high heat. Once the oil is hot, add the bell peppers, green onion and jalapeno. Cook, stirring frequently, until the vegetables are slightly wilted, 5 to 6 minutes. Add the garlic and stir fry until fragrant, another 1 to 2 minutes.
Pour in the sauce and bring to a simmer, stirring occasionally, until it slightly thickens, 3 to 4 minutes. Add the fresh noodles and mix until they are fully incorporated with the sauce. Continue to cook according to package directions, usually no more than 5 or 6 minutes. Toss in the soy curls and mix until combined. Serve immediately with fresh green onion and toasted sesame seeds.
