These meatball sub bites are a fun twist on the classic meatball sub sandwich! Fluffy crescent roll dough is layered with savory marinara sauce, vegan mozzarella, and premade meatballs for an easy snack that is perfect for get-togethers! The best part? They’re not nearly as messy as a meatball sub, but they’re every bit as delicious!

Meatball Sub Bites

Hey friends! I’m back with another recipe for my Game Day Snacks Series and today, it’s these cute and delicious meatball sub bites! Basically a classic meatballs sub, but in bite-size form for easy snacking 😉 Just like the easy Taco Dip recipe I shared a couple days ago, these meatball sub bites are always a crowd-pleaser when I bring them to get-togethers! Plus, they’re super simple to prepare, so grab a drink and let’s get to cookin’!

What goes in Meatball Sub Bites

I love this recipe for several reasons! One of them being that the ingredients list is simple! Here’s what you’ll need to make ’em:

  • Crescent roll dough sheet: I like to use the Pillsbury Crescent Roll Sheets, which happen to be vegan-friendly! I also find them fairly accessible and reasonably priced! If you can’t find the sheets, you can use regular crescent roll dough – just lay it out and go over it with a rolling pin so it forms one large sheet – then cut it into 12 squares. Additionally, you can use vegan-friendly biscuit dough as well!
  • Marinara sauce
  • Vegan mozzarella shreds
  • Premade vegan meatballs: I can typically find at least one brand of vegan meatballs at my local grocery store. Some brands I’m able to find are Gardein, Good & Gather by Target, Beyond Meat, and Impossible. I always check my discount grocery stores for sales, too!
  • Fresh basil

Step-by-Step Instructions

As simple as the ingredients list is for these meatball sub bites, so are the steps to make them! Here’s how:

1. Preheat:

Your oven to 375°F

2. Cut the Dough:

Unroll the crescent roll sheet on a clean, lightly floured surface. Using a sharp knife or pizza cutter, cut the dough into 12 squares (3 rows, 4 columns), then line each square into a lightly greased cupcake tin. 

3. Build:

Place 2 teaspoons of the marinara into each dough square, followed by 2 teaspoons of the vegan mozzarella shreds. Place a meatball into each dough square, then top each meatball with a couple more teaspoons of the mozzarella and marinara sauce. 

4. Bake:

Place the cupcake tin in the oven and bake until the dough turns light- golden-brown and the cheese is melted and bubbly, 10 to 13 minutes.

5. Enjoy!

Remove the cupcake tin from the oven and let it cool at room temperature for 5 minutes. Garnish with fresh minced basil and serve with extra marinara sauce and enjoy!

Tips and FAQs

Crescent Dough:

If you can’t find crescent roll sheets at your local grocery store, you can use a regular roll of crescent dough or vegan-friendly biscuit dough. Simply open, unwrap the dough, and lay it flat. Run a rolling pin over it or gently pinch the triangles together to form a sheet, then cut dough into 12 squares.

Serving Size:

If you have a mini cupcake tin, you can certainly stretch this recipe out to make 24 mini meatball sub bites instead of 12 larger ones! Simply cut the dough into 24 squares (4 rows, 6 columns) and halve the meatballs!

Storing and Reheating:

To store the meatball sub bites, please them in a covered container in the refrigerator up to 3 days. To reheat, I recommend placing them in the oven or air-fryer at 350° for 5 to 8 minutes for best results. Additionally, you can reheat them in the microwave for 1 to 3 minutes, until heated through.

Can I Freeze Them?

Yes! To do so, prepare them according to the directions, then let them cool completely at room temperature. Once cooled, place them in an even layer on a large baking sheet and pop them in the freezer for 2 to 3 hours. Once they’re frozen, transfer them to a large ziplock bag or freezer-friendly container and freeze them up to 30 days. When you’re ready, thaw the bites in the refrigerator overnight, then reheat them according to directions above.
