Caramelized onions, cooked-til-crisp vegan ground beef, garlic, & ginger are tossed with the most delicious 6-ingredient sweet 'n savory sauce then served over a bed of slurpable noodles. Go ahead and put your phone down, cuz you won't be ordering takeout for a looong time after trying this recipe!
Ingredients
Vegan Crispy Ginger 'Beef' Ramen:
  • 2 TBS avocado oil
  • 1 small onion, sliced thin
  • 1 LB vegan beef crumbles
  • ½ cup green onion (white and green parts), sliced thin + more for serving
  • 10 cloves garlic, minced
  • 2 TBS fresh grated ginger
  • 10 oz ramen noodles
  • Fresh cilantro, for serving
  • Thinly sliced carrots, for serving
  • Toasted sesame seeds, for serving
Sauce
  • 4 TBS vegan butter, room temperature
  • 4 TBS low-sodium Tamari
  • 2 TBS Hoisin sauce
  • 1½ tsp black pepper
  • 1 tsp sesame oil
  • 1 tsp red pepper flakes
Instructions
  1. In a large skillet on medium heat, add avocado oil. Once the oil is shimmering, add the onion and cook, stirring often, until it begins to caramelize, about 10 minutes.
  2. While your onions are caramelizing, cook ramen noodles according to package directions. Reserve 2 tablespoons of the water used to cook the noodles, drain, and set aside.
  3. Add the vegan ground beef to the onions and crumble it with the back of a wooden spoon. Cook with the onions, getting the bits nice and crisp, while the onions continue to caramelize, another 10 minutes.
  4. Meanwhile, prepare the sauce. Mix together all the sauce ingredients with 1 tablespoon of reserved pasta water (I like the sauce quite thick, but if you want it a bit thinner, add both tablespoons of reserved pasta water). It's ok if the sauce seems more like a paste! It will all melt into the noodles and crispy beef. Taste, adjust seasonings, and set aside.
  5. In the same skillet of caramelized onions and vegan ground, add green onions, garlic, and ginger. Cook until the garlic and ginger are fragrant, another 2-3 minutes. Remove from heat.
  6. In the same pot that you cooked the noodles in, mix together your cooked ramen noodles, sauce, and crispy beef mixture. Toss well to ensure all the noodles are coated in that delicious sauce! Serve with cilantro, carrots, sesame seeds, and green onion.
