Vegan Cauliflower Gratin

Cauliflower Gratin. Creamy, cheesy, and super EASY! Baked until golden brown and bubbly, this vegan cauliflower gratin is sure to be the new star at any Holiday table.
Ingredients
  • 1 large cauliflower, about 3 LBS, cut into florets
  • 3 TBS vegan butter
  • 6 cloves garlic, minced
  • 3 TBS vegan flour
  • 2 cups unsweetened original soy milk
  • 1 pack vegan smoked gouda slices, cut into cubes
  • ½ cup vegan cheddar shreds
  • ¼ cup vegan parmesan cheese
  • 1 tsp kosher salt
  • 1 tsp fresh thyme
  • ½ tsp red pepper flaskes
  • ⅛ tsp nutmeg
  • 1 cup crispy onions, divided
  • Fresh parsley, for garnish
Instructions
  1. Preheat oven to 375 degrees
  2. Cook the cauliflower florets in a large pot of salted boiling water until slightly tender, about 5-6 minutes. Drain and set aside.
  3. Melt butter in a large saucepan over medium-low heat. Add garlic and sauté until fragrant, about 2 minutes. Sprinkle in flour and whisk constantly for about 2 minutes.
  4. Slowly pour in soy milk and whisk until it comes to a slight boil and smooth of any clumps.
  5. Turn heat to low and smoked gouda, cheddar, parmesan, salt, thyme, and red pepper flakes. Continue to whisk until the cheese is mostly melted and free of clumps.
  6. Pour about ¾ cup of cheese sauce on the bottom of an oven safe baking dish. Toss the cauliflower with the rest of the cheese sauce and ½ cup of crispy onions, making sure all the florets are coated in cheese sauce. Add tossed cauliflower to the prepared baking dish and top with remaining ½ cup of crispy onions. Bake until bubbly and golden brown, about 25-30 minutes.
  7. Garnish with fresh parsley and serve warm.
